Sweet Tea and Show & Tell Party

 We typically have tea with dinner; sweet tea that is.  Friends tell us we make good tea.  So, I wanted to share our recipe with you tonight.

~bring to boil 4 cups of water

~add two family sized tea bags to the boiling water and let steep for about 5 – 7 minutes (depending on how strong you prefer your tea.)  We use Luzianne decaf….it’s really enjoyable!

~remove tea bags and pour hot tea into a 2 qt. pitcher

~while the water is still hot (this is key) add 1 cup of sugar and stir to blend.

~add 4 cups cold water to tea

~serve over ice and ENJOY!!

Carryin’ on in the Kitchen, Part 2

Well, kids, I believe it has been a week since I shared with you that I was ready to change out my breakfast room curtains. It was hard for me to make the decision to take them down because, as I mentioned, they were a labor of love.  If you remember, though, I fell out of love almost as soon as they were hung.  They look cheerier in this photo than in real life.

As you probably recall, I tried to make them work by seeing if a lighter color on the walls would help.

 Agh..looking at this makes me want to gag. 

A very good thing came out of that topless night: I realized how much I love the original color on my walls.   So, I covered over my test paint area with the original color (SW Ivoire).   This time, I managed to keep on all of my clothes.  ;)

I am just tickled to death at the new look of my breakfast room!  Now that it is all bright and cheery, the room finally lives up to its purpose, and I have a room that says “good morning”.

 I’ve kept you waiting for a week…so without further ado…

I ended up going with these cafe valances and tiers by Better Homes & Gardens.  I love everything about them; including the price!

Here’s a closer peek at the details. I kept hoping the wrinkles would just fall out.  Looks like I will need to iron, or give them a little smoothing with Downy wrinkle releaser. That stuff works.

While I was at it, I went ahead a played around with the accessories and decor in this room; taking stuff out, bringing things in from other rooms, and making a few inexpensive purchases.  Would you like to look around?

I brought this diy chalkboard in from the dining room.  I wrote the winter phrase on there while it was still in the dining room.  I plan to erase it and use the board for weekly menus.

 To the right of the chalkboard and sunflowers, I hung this magnetic memo board that I just bought at Marshall’s HomeGoods a  few weeks ago.  You might remember me showing it to you then.  Anyway, I just love it in the breakfast room.

I hung up the photos taken last Easter of my daughter and her cousins .   The pictures couldn’t be more fitting for this room, and I love that they add a personal touch.  I like to add sentimental decor whenever possible.  Here’s a closer look at the “cousins in the chicken coop.”

That was the left wall of the room.  Now, panning around to the back wall, I think the weathered wood accent table fits this wall space perfectly.  It is sitting under a rooster picture I got for Christmas.  I also set my little rooster bowl on top.  I bought the table at Kirklands...hmmmmm, maybe this past summer and was using it in the living room.  I want to add a lamp here, too.  oooh, I just realized what lamp I can use!  Love lightbulb moments!!

Now, looking around to the right… I sewed the pillow four years ago to go with the old curtains.  So, after everything was hung and I realized the rooster pillow matched, he got to stay!  I was so excited about that, y’all!

 I set it in the corner of the window seat with one of my new treasures.  Do you see it?

I bought the chicken wire caddy at Ross the other day.  I really scored that day.  I got this caddy, two lamp shades and a set of 3 white pitchers all for $32 and some change.  Okay, let me get back on track.  I’m tellin’ ya, I get so easily sidetracked that I must have ADD.

This sunshine plaque sits in the other corner of the window seat.

My Mom bought it for me as a house warming gift when we first moved into this house.  She said it reminded her of me.  Awwww.  

Last on the tour is this wall art..

 My in-laws bought it for me as a wedding gift after I had admired it in a shop in Old Town Spring.  That was fourteen years ago.  Here is a closer look at the Lord’s Prayer.

So intricate.  It hangs on a small wall that divides the breakfast area from the kitchen.  I’ll be showing you the kitchen soon.

Fish Tacos

I just finished cleaning up the kitchen after a yummy dinner of fish tacos, with a side of black beans, and some chips with salsa and guacamole.  This is such a quick, easy and enjoyable meal, that I wanted to share it with you.

You will need a light, flaky fish.  I keep a bag of individually wrapped, frozen talapia filets on hand which is what I used for this recipe.  I use four filets to feed a family of three.  So, I would recommend that you use at least one filet per person.

While the fish is defrosting,  heat up *grapeseed oil in a skillet.  Once the filets are defrosted, use a southwest rub to season them.  I use Adams Reserve Southwest Ancho Sear n Crust.  After generously coating both sides of the filets, use tongs to place the fish in the hot oil.  Cook 2 – 3 minutes on both sides.

After the filets are cooked,  set them aside on a plate, and use the leftover oil to heat up corn tortillas.  For my family, I heat up two tortillas per person.  When the tortillas start to bubble a little, turn them over and heat them about a minute longer.

Once you have the first round of tortillas in the skillet, heat a can of black beans in a small sauce pan.  This only takes a few minutes.  We like to stir in a little salsa and cheese to add some flavor.

Set out your favorite taco fillings.  We enjoy traditional fillings like lettuce, tomatoe, onion, cheese and sour cream.  You could also mix mayo, slaw and southwest seasoning for more of a baja style taco.

Once the beans and tortillas are heated, dinner is ready.

*Grapeseed oil doesn’t overheat and burn as easily as olive oil and it also doesn’t flavor your food.

Dumplin’s Chicken and Dumplings

About 12 years ago, I cooked some chicken and dumplings for my husband’s uncle.  He reminisces over that meal as though it was the best he’s ever had.  The dumplings I made for him were way too salty, but he gave me the ultimate compliment by going for seconds.  He has been calling me Dumplin’ ever since that meal together.  Since then, my recipe has become a combination of the recipe my momma gave me and that of a friend.  While the recipe has evolved over the years, it’s been my daughter’s favorite meal since she was about 6 years old.  But that’s enough talking.  Let’s get to it.

Ingredients:

1 box of chicken broth

3 to 5 stalks of celery, chopped

1 cup of onion, chopped

a bag of baby carrots or carrot slices

4 boneless, skinless chicken breasts

1 can of cream of chicken soup

pepper

2 cloves of chopped garlic

2 cans of biscuits

Directions:

After you have diced the celery and onion, bring the chicken, celery, onion, and half the bag of carrots to a boil in the chicken broth.  Boil until the chicken is cooked and the vegetables are tender.

Meanwhile, you can chop the garlic, open the can of cream of chicken and set out your pepper.

Once the chicken is cooked through, take it out of the pot and place it on a plate so that it will cool to the touch.  Turn the heat down to low.

While the chicken is cooling, stir in the cream of chicken, chopped garlic and pepper to taste.  Turn the heat to medium high and let the ingredients simmer.

While this is simmering, open the cans of biscuits, and cut the biscuits into quarters.  If you like your dumplings soup style, don’t do anything else.  If you prefer creamier style dumplings, sprinkle the biscuits and a rolling pin with a little flour and roll out the biscuits.

Once your biscuits are ready, gradually add them to the simmering pot.  Cover the pot, turn up the heat and cook until dumplings have cooked through.  While the biscuits are cooking, shred the chicken into bit sized pieces.

Once the biscuits are cooked through, turn down the heat to low and stir in the chicken.

Oh, yeah.  Looking good.  Go ahead and help yourself.  There’s plenty.  This recipe serves 8.

Tip #1: I recommend putting your chopped vegetables in ramekin bowls to get them out of your way as you continue chopping, and it makes it easy to add them in the pot.  

Tip #2 Use the dull side of your knife to scoop the diced vegetables into the ramekin bowl.

Tip # 3: Taken from Rachel Ray-  Using a trash bowl makes cleaning as you go easy.  Once everything is cooking, just dump the trash in the garbage.

Chicken Wire Canisters

Come into my kitchen.  I have something I want to show you today.

With all of the pictures and posts about chicken wire lately, I was starting to feel a little envious.  Then, last night as we were unloading groceries, I looked over and saw my “canisters” and realized, “Hey, I do have my very own chicken wire!” The realization brought me a sense of pleasure, and I couldn’t wait to post about it.

  Today, I am delighted to show you my chicken wire baskets that I use as canisters; not in the traditional since, though.   I’m not much a of baker, but I sure do love to cook.  So, I turned these baskets into canisters that would serve my purpose.

I am currently storing cutie clementines in the largest basket.  I just love the colorful presentation.

 The middle sized basket holds some kitchen utensils.  Eventually, I plan to collect vintage utensils to display.

The little basket acts as an herb garden.  Well, sorta.  The herb plant is artificial, but the garlic next to the basket is real.  Does that count?

What crumbs?  ;)

Even if these baskets were empty, they are very lovely all on their own.  I love the details such as the ball feet,

the wooden handle, (I don’t see any crumbs. Do you?)

  I LOVE my chicken wire canisters!  Do your canisters serve for baking or cooking?

The lesson for today is this:  keep function in mind, and decorate according to how you live.

Campfire Salsa Steak from the Cooking Connection

My senses are fully awakened when I go to HEB, my local grocery store.  They have a Cooking Connection where they demonstrate recipes and give out samples; my favorite sample being the wine. Somehow the rest of my grocery trip gets a whole lot more fun after I stop by the Cooking Connection.  ;)   Anyway, I’ve picked up several recipes from there.  The one I cooked tonight is called Campfire Salsa Steak.
